Cast Iron Skillet Guide

A well-kept cast iron pan outlives every nonstick coating.

Cast Iron Skillet Guide

Seasoning Basics

Oil polymerizes on iron creating a natural nonstick layer. Flaxseed oil is popular; any high-smoke-point oil works.

Daily Cooking

Excellent for searing, baking cornbread, and stovetop-to-oven dishes. Avoid acidic simmering until seasoning is mature.

Restoration

Rust scrubs off with steel wool. Re-season from scratch and the pan is good as new.
